The Role of the Essential Fatty Acids (Omega-3s)

- There are 2 families of EFAs. They are the Omega-3 fatty acids and the Omega-6 fatty acids. The Omega-9 fatty acids (found in oils like olive oil) are not "essential" since our bodies can make them.
- They are termed "essential" since we cannot make them, but need to supply them in what we eat
- Both Omega-6 and Omega-3 fatty acids are stored in the cell membranes of tissues and have 2 primary functions. These are:
- They are structural components of cell membranes where they ensure fluidity, stability and act as gate-keepers in the cell
- Both Omega-6 and Omega-3 fatty acids are converted into a number of important, active molecules called prostaglandins
