The Role of Vitamins & Minerals

Farming Techniques Have Changed in the Past 50 Years

  • Much of the food we eat is grown on land that has been farmed for many years.
  • This land is fertilized with 3 common elements (Potassium, Phosphorus and Nitrogen) which yields good looking fruits and vegetables, but the 4-5 dozen trace elements (see following tables) that should be in the plant are missing because they were not added back to the soil.
  • Data from the USDA and other sources show a decline in mineral and vitamin content of several fruits & vegetables between 1914, 1963 and 1992.*
