The Role of Vitamins & Minerals
Farming Techniques Have Changed in the Past 50 Years Much of the food we eat is grown on land that has been farmed for many years.
This land is fertilized with 3 common elements (Potassium, Phosphorus and Nitrogen) which yields good looking fruits and vegetables, but the 4-5 dozen trace elements (see following tables) that should be in the plant are missing because they were not added back to the soil.
Data from the USDA and other sources show a decline in mineral and vitamin content of several fruits & vegetables between 1914, 1963 and 1992.*
